Brisa is our ode to what Brazilian naturals do best. Grown at an altitude of 800 to 900 meters and sun-dried in the fruit, this Obatã lot develops a deep, jammy sweetness — think ripe dark cherry and dried plum, with a soft stone-fruit finish that lingers.
We roast Brisa light-medium and drop it early, just past the first crack, to keep the fruit bright and the body silky. It is the most expressive coffee in our lineup: lively as a filter brew and surprisingly juicy as a modern, fruit-forward espresso.
This exceptional lot comes straight from Fazenda Pinheiro, nestled in the rolling hills of Mococa, in northern São Paulo. Although the property had been growing small coffee lots for many years, it was only in 2003, when Maria Silva and Marco A. Guardabaxo took over the land, that the true potential of the place awakened.
In 2007, they planted 9.5 hectares of coffee across the farm's flat plains, while eucalyptus trees embrace the surrounding hills. Since then, Marco has been using all his expertise as an agronomist to consistently renovate, expand, and care for the farm.
